Curried Cream of Cauliflower Soup
makes four 3/4C servings
From Take Two Apples And Call Me In The Morning
2 tsp Butter
½ C chopped Onion
1T Curry Powder (this amount gives a little bite, use less if you
prefer)
1/8 t Saffron
½ cup Golden Delicious or other sweet apple
3 C Cauliflower florets
2 C Vegetable or Chicken Broth, warmed
½ C Coconut Milk
1. Melt butter in heavy pot over medium heat. Saute, onions, curry and saffron for 2 minutes stirring often.
2. Add apple and sauté another 5 minutes.
3. Add cauliflower, warm stock, salt and pepper to taste. Bring to boil then reduce to simmer and cook until cauliflower is tender, 15-20 minutes.
4. Add coconut milk and simmer until hot. Transfer in batches to a blender and puree until smooth.
